Let me think, let me think…what are two of my favorite things. Oh yeah, cupcakes and kale, of course! Well, as luck would have it, I have had the incredible fortune of befriending the amazing mama, recipe creator, and storyteller behind the ever-so-popular food blog Cupcakes and Kale.
Jess lives in Northern Ontario and is the vegan mama behind Cupcakes and Kale, where she blogs about food, life & co-parenting her sweet little chickpea with her husband Mark. When she’s not writing or chasing her little one around, she’s busy running her bakery, Oh My Bakeshop. Her first cookbook, Greens 24/7 is coming January 2015.

1. How did Cupcakes + Kale come about?
I had just finished up a contract working in education for a local food co-operative and I was missing the chance to talk all day about my passion for food, and had been spending mornings pouring over food blogs when I thought, ‘Hey, I can do this too!’.  Although I was intimidated at first to post my own musings, I reassured myself that no one would ever read my blog so there was no need to worry.  Well, as it turned out, people did read it and the response was overwhelmingly positive.
2. What about Cupcakes + Kale makes you wake up everyday?  
I love how food brings people together.  I get really exciting about food, whether it be shopping for it, talking about it, dreaming up recipes, or preparing foods to share with family and friends.  Sharing those recipes online is just a natural, virtual extension of that.
3. How long have you been on a Plant Based Vegan Diet and what made you make the shift?
I have been vegan for 4 years and prior to that I followed a vegetarian diet for almost 20 years.  I stopped eating meat because of my profound love of animals as a young child and that continues to be the reason today.
4. What are your favorite summer recipes as of right now?
Green smoothies are my favourite way to start the day, especially topped with granola.  I always love noodles, and lately I’ve been enjoying this recipe for Almond Butter Noodles with Beans + Greens again and again.  Oh, and these Rhubarb Bliss Bars too, because I LOVE rhubarb season!

5. What’s the one tip you tell people on how to live a happy and healthy life?
Find what makes you happy and figure out a way to make a living doing it.  You will never regret having found a way to enjoy getting up everyday to follow your passion.
