Hmmm…sweet ‘n’ spicy pecans. Sounds interesting, but why would I make these, you might ask. Well, let’s just say these bad boys are not just great for snacking, they’ll make just about any dish you make for new years officially not boring. Ooh, and did we mention they make great gifts year round too!?! Simply place them in a mason jar, tie a bow around them and there you go. Gift giving ready.

Sweet ‘n’ Spicy Raw Candied Pecans

INGREDIENTS:

1 1/2 cup whole pecans
6 tbs coconut palm sugar
2 tbs maple syrup
1/2 tsp cinnamon
1/2 tsp sea salt
1/8 tsp cayenne pepper
1/8 tsp fresh ground pepper
1 tbs lemon zest

DIRECTIONS:

Combine palm sugar, maple syrup, cinnamon, sea salt, cayenne and ground pepper in a bowl until it becomes a thick paste.

Add pecans over a mesh dehydrator tray and dry at 115º for 2-3 hours or until dry.
Store in an airtight container.

*Don’t have a dehydrator? Place your oven on low and crack the door a bit, this will create a low heat dehydrator effect. Just make sure to keep an eye on them so they don’t get too hot.

Why Coconut Palm Sugar?
Coconut palm sugar, made from coconut tree nectar, may help maintain proper levels of blood glucose, or sugar, while providing an abundance of nutrients and minerals to keep you healthy. Coconut palm sugar acts as a great brown sugar replacement with a GI of 35 – much lower than table sugar, which is somewhere around 60.
